For increased roundness in red wines Opti-MUM Red™ is a part of the newest generation of yeast derived nutrients. Opti-MUM Red is sourced from a specific known wine yeast that is naturally high in polysaccharides. Adding Opti-MUM Red at the beginning of fermentation increases the availability of polysaccharides at a time when polyphenols are being released and diffused. This maximizes the formation of polyphenol-polysaccharide chains.
Using Opti-MUM Red results in red wines that are more intense in color, have more rounded mouthfeel, and a decreased perception of astringency.
Recommended Dosage
20–40 g/hL 1.7–3.4 lb/1000 gal
Mix Opti-MUM Red in 10 times its weight in water or juice and mix. If adding later, add during a pump-over or during tank mixings. This product is partially soluble. Stir to maintain suspension before and during addition.
Dated expiration. Store in a cool, dry environment at 18°C(65°F). Once opened, keep tightly sealed and dry.
