The β-lyase activity of Fermivin TS28 optimizes the release of thiol aroma precursors, such as boxwood, gooseberry, and mineral (stone, flint). Produces crisp, aromatic white wines with balanced mouthfeel. Optimal fermentation temperature of 15–22°C (59–72°F), moderate nutrient needs and an alcohol tolerance of 14.5% (v/v).
