S. cerevisiae • cerevisiae Chardonnay, Pinot Blanc Isolated by the Bureau Interprofessional des Vins de Bourgogne (BIVB) in France. It is a steady, slow fermenter even at cooler temperatures (15°C/59°F). Lalvin Bourgoblanc CY3079® demonstrates good alcohol tolerance and low production of VA and H2S when properly fed. Highly recommended for barrel-fermented and sur lie aged Chardonnay. Autolyzes quickly at the end of fermentation. It is reported to enhance aromas such as fresh butter, honey, flowers and pineapple.
