CVRP is one of the highest polysaccharide producers in their collection. CVRP is a moderate rate fermenter with medium nitrogen demands. This strain is tolerant to 16% (v/v) and can ferment from 64–86°F. Wines made from CVRP are characterized by enhanced mouthfeel, roundness, soft tannins and enhanced varietal character. Ideal for big reds. Good compatibility with malolactic bacteria.
