When SO\u003csub\u003e2\u003c\/sub\u003e\u003cspan\u003e \u003c\/span\u003eis added to wine, a portion of it becomes immediately bound while a remaining portion is unbound SO\u003csub\u003e2\u003c\/sub\u003e. The portion that is unbound is also called free SO\u003csub\u003e2\u003c\/sub\u003e and it is responsible for protecting the wine. The bound and free SO\u003csub\u003e2\u003c\/sub\u003e\u003cspan\u003e \u003c\/span\u003etogether are referred to as total SO\u003csub\u003e2\u003c\/sub\u003e.
