This complex yeast nutrient’s alpha cellulose fibers detoxify or
“Clean” the must through the adsorption of medium chain length
fatty acids (C6-CB-C10) produced during fermentation.
• Fibers also help provide a support matrix for the yeast, especially critical in
highly-clarified juice, such as those processed by centrifuge or where mold/rot
conditions existed on incoming fruit.
• Contains many of the necessary nutritional needs of the yeast
Application: Fermo-Clean can be used 24 hours after fermentation has started and if required again at mid-fermentation.
